Golden Poached Chicken
The one to order. Silky, gold-skinned, chopped over bamboo with soy and fried garlic.
Up a back-lane staircase in Kepong, a retro tea-house poaches free-range chicken to a golden hush — chopped over bamboo, glossy with soy, fresh since morning.
There is no grand entrance. You spot the signboard, then slip around to the back lane and climb a narrow staircase to the second floor — the kind of place regulars keep half to themselves.
At the top, the city falls away. Emerald walls, turquoise glass, woven-rattan lamps and old bentwood chairs — a Nanyang tea-house paused somewhere in the good old days, humming quietly over lunch.
Then the chicken arrives, and you understand why everyone climbed the stairs.

Free-range birds, poached until the skin turns a deep, glossy gold and the meat stays silky and just-set. Chopped over a paper-lined bamboo basket, slicked with soy, showered in fried garlic, and finished with the house ginger-scallion and cilantro sauces.
